Attack of the Pies!

I came across some pictures of my pie handy work today, and thought I would share them.


You might be wondering why I put extra effort into the crust....because its the best part!

A Day of Baking

The Nest was cooking all afternoon, with two major baking projects (the joy!).

The first was a set of 24 rainbow cupcakes for our Children's Theater workshop cast party.  Why rainbow?  What else would you bring to celebrate a run of "Joseph and His Amazing Technicolor Dream coat"?!

While I typically make everything from scratch, I was seriously short on time today, so I compromised and used store bought batter and icing (colored in four different shades).




The other baking project, a large pie, was for the weekly family dinner with the in-laws (but really any reason to bake a pie, right?)  I used my favorite recipe, changed over the few years I've been alive to its present state.  I rarely measure but I'll do my best to boil it down:

Sparrow's Four Berry Pie
 You'll need:
-1 blind baked pie crust
-2 cups sugar
-2 tablespoons vanilla
-1 cup corn starch
-1 tablespoon cinnamon
-1 teaspoon nutmeg
-a splash of lemon juice
-1 lb strawberries, cleaned, capped and sliced
-12 oz raspberries
-22 oz blueberries
-6 oz blackberries

Blind bake your crust.  I chose to make a braided crust for this one.
While the crust bakes (8 minutes or so), mix together the berries in a very large bowl.  Add 1 and a half cups of the sugar, the lemon juice, cinnamon, nutmeg and cornstarch.

Once the crust has cooled a bit, spoon the fruit mix into the crust, filling right up to the crust.  You may add some of the juice, but be careful not to add it all (lest you get a very drippy pie).  Dust the top of the pie with the remaining 1/2 cup sugar. 


Place the pie on a cookie sheet and set in the oven, set for 350 degrees.  Let cook for about 20 minutes.  Remove from the oven and cover the crust with foil to prevent burning.  Cook until the fruit mix bubbles, about 20-30 minutes (depending on the oven). 

Pull out, and let cool for an hour.  Enjoy!!

Husband's Key Lime Birthday Suprise

It's Husband's 24th birthday today! In his honor, I'm baking one of his favorite's-

Key Lime Pie

I have a favorite (simple) recipe that never fails, Southern Living Cookbook's Key Lime Pie.

The ingredients:
  • 3 Large Egg Yolks
  • ½ cup Key Lime Juice
  • 1 Can Sweetened Condensed Milk
  • ¼ Teaspoon Vanilla Extract
  • Pinch of salt
  • 1 ready made 6-9 oz Graham Cracker Crust
  • Garnishes: Whipped Cream (with a Stabilizer), Berries
Preheat the oven to 350 degrees.

Whisk together the egg yolks and lime juice.  Add the condensed milk, vanilla, and salt.  Whisk until blended.  I added just a tinsy bit of green and blue food coloring...for, you know, fun.



Pour the tasty goop into the pie shell (baked for just a few minutes beforehand) and pop it into the oven for 10-15 minutes.  Pull it out when the top is slightly jiggly, but not runny. 

Watch your crust!  If your oven is anything like the oven we have here in the nest, your crust could burn in just a few minutes. Be sure to have foil on hand to cover pies.

Let the pie completely cool before adding garnishes. 

Theres' nothing better than homemade whipped cream.  And nothing easier. 

Whipped cream

Ingredients:
  • 1 Pint Heavy Cream
  • Powered Sugar
  • Vanilla to Taste
  • Stabilizer (I like to use Dr. Oetker's Whip It)
Pour the cream into your stand mixer or bowl with hand mixer and whisk for 1 minute until bubbles begin to form.  Add the powered sugar to taste ( I typically use a half cup per pint).  Add vanilla to taste, typically a half tablespoon.  Quickly add the stabilizer before peaks form in the whipping cream.  Don't over beat.  Stop before the peaks begin to separate.

Wow that was easy.  And look what a pretty pie it makes.
